Salmon Sushi

Fresh salmon sushi with properly seasoned sushi rice. Use only sashimi-grade salmon for safety.

Ingredients
2 cups sushi rice
3 cups water
1/3 cup rice vinegar
3 tablespoons sugar
1 teaspoon salt
8 oz sashimi-grade salmon
Nori sheets
Wasabi paste
Pickled ginger
Soy sauce
Directions

Rice Preparation

  1. Rinse sushi rice until water runs clear.
  2. Cook rice with water in rice cooker or pot (1:1.5 ratio).
  3. Heat vinegar, sugar, and salt until dissolved. Cool.
  4. Mix vinegar mixture into cooked rice. Cool to room temperature.

Salmon Preparation

  1. Slice salmon against the grain into 1/4 inch thick pieces.
  2. For nigiri: form rice into oval shapes, top with salmon.
  3. For maki: place rice on nori, add salmon, roll tightly.
  4. Serve immediately with wasabi, ginger, and soy sauce.
