Ingredients
2 lbs beef chuck, cubed
3 carrots, chopped
3 celery stalks, chopped
2 potatoes, cubed
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
2 tablespoons tomato paste
2 bay leaves
1 teaspoon thyme
1 cup green beans
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons flour
Directions

Preparation

  1. Season beef cubes with salt and pepper, dust with flour.
  2. Heat oil in large pot, brown beef on all sides.
  3. Add onion and garlic, cook until softened.
  4. Stir in tomato paste, cook 1 minute.

Cooking

  1. Add broth, bay leaves, and thyme. Bring to boil.
  2. Reduce heat, simmer covered for 45 minutes.
  3. Add carrots, celery, and potatoes. Cook 20 minutes.
  4. Add green beans, cook 10 minutes more until tender.
  5. Remove bay leaves before serving.
