Ingredients
2 lbs beef chuck, cubed
3 carrots, chopped
3 celery stalks, chopped
2 potatoes, cubed
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
2 tablespoons tomato paste
2 bay leaves
1 teaspoon thyme
1 cup green beans
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons flour

Preparation
- Season beef cubes with salt and pepper, dust with flour.
- Heat oil in large pot, brown beef on all sides.
- Add onion and garlic, cook until softened.
- Stir in tomato paste, cook 1 minute.
Cooking
- Add broth, bay leaves, and thyme. Bring to boil.
- Reduce heat, simmer covered for 45 minutes.
- Add carrots, celery, and potatoes. Cook 20 minutes.
- Add green beans, cook 10 minutes more until tender.
- Remove bay leaves before serving.
