2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
6 large egg yolks
2 cups fresh raspberries
1/4 cup lemon juice
1 teaspoon vanilla extract
Pinch of salt

Preparation
- Puree raspberries with lemon juice, strain to remove seeds if desired.
- Whisk egg yolks with 1/2 cup sugar until pale.
- Heat milk and remaining sugar until just simmering.
- Slowly whisk hot milk into yolks to temper.
Custard Base
- Return mixture to pan, cook stirring constantly until it coats spoon (170°F).
- Strain custard, stir in cream, vanilla, and salt.
- Mix in raspberry puree, chill completely (4+ hours).
- Churn in ice cream maker according to manufacturer instructions.
- Freeze until firm, about 4 hours.
