Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
6 large egg yolks
2 cups fresh raspberries
1/4 cup lemon juice
1 teaspoon vanilla extract
Pinch of salt
Directions

Preparation

  1. Puree raspberries with lemon juice, strain to remove seeds if desired.
  2. Whisk egg yolks with 1/2 cup sugar until pale.
  3. Heat milk and remaining sugar until just simmering.
  4. Slowly whisk hot milk into yolks to temper.

Custard Base

  1. Return mixture to pan, cook stirring constantly until it coats spoon (170°F).
  2. Strain custard, stir in cream, vanilla, and salt.
  3. Mix in raspberry puree, chill completely (4+ hours).
  4. Churn in ice cream maker according to manufacturer instructions.
  5. Freeze until firm, about 4 hours.
