4 salmon fillets (6 oz each)
2 heads romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1 cup croutons
2 cloves garlic, minced
2 anchovy fillets
1/4 cup lemon juice
1 egg yolk
1 teaspoon Dijon mustard
1/3 cup olive oil
Salt and black pepper
2 tablespoons olive oil for salmon
Directions

Caesar Dressing

  1. Mash garlic and anchovies into paste with fork.
  2. Whisk in egg yolk, lemon juice, and Dijon mustard.
  3. Slowly drizzle in olive oil while whisking to emulsify.
  4. Season with salt and pepper.

Grilled Salmon

  1. Season salmon with salt, pepper, and olive oil.
  2. Grill over medium-high heat 4-5 minutes per side.
  3. Cook until internal temperature reaches 145°F.

Assembly

  1. Toss romaine with dressing and half the Parmesan.
  2. Top with croutons and remaining cheese.
